Let’s toast to St. Patrick’s Day with Signal Hill Whisky cocktails!
THE DRINK: Carrot Penicillin
The Goods:
– 2 oz.| 60 mL Signal Hill Whisky
– ¾ oz.| 22 mL Carrot/ Ginger / Honey Syrup **
– ¾ oz. | 22 mL Fresh Lemon Juice
-¼ oz | 8 mL Peated Scotch
The How To:
Add Signal Hill Whisky, carrot/ginger/honey syrup, and lemon juice to a cocktail shaker and shake over ice for 10 seconds. Strain into a rocks glass over a large ice sphere. Top with peated scotch and garnish with a thin carrot slice and/or candied ginger and/or lemon zest
** Carrot/ Ginger/ Honey Syrup Combine ½ cup honey with ½ cup carrot juice and 1 large piece of ginger (peeled) into a small pot. Bring to a boil, reduce heat and let simmer for 10 minutes to extract all the ginger flavour. Double strain into a jar of choice, label and refrigerate up to 1 month.
